To get content out of an email in iPad, I just selected all, cut and paste to Pages, and then exported the Pages doc via iTunes. There’s no other way to describe that process than awkward or more aptly: closed ecosystem FTW! Note that you can also email the doc to yourself or share it on iWork. Guess you could paste it into a blog post, save it unpublished for later or a note and then sync that to Apple Mail.
